武夷肉桂茶是產于山巖的巖茶，為烏龍茶的上品，品質特點為：味甘澤而香馥郁，沒綠茶之苦，無紅茶之澀，性和不寒，久藏不壞，香久益清，味久益醇。
 
肉桂除了具有巖茶的滋味特色外，更以其香氣辛鋭持久的高品種香備受人們的喜愛。肉桂的桂皮香明顯，佳者帶乳味，香氣久泡尤存，沖泡四、五次仍有餘香；入口醇厚回甘，咽後齒頰留香；湯色橙黃清澈，葉底黃亮，紅點鮮明，呈綠葉紅壤邊狀；條索勻整，緊結捲曲，色澤褐綠，油潤有光，部分葉背有青蛙皮狀小白點。
 
用武夷巖茶的製作方法而製成的烏龍茶，為武夷巖茶中的高香品種。肉桂茶產於福建省武夷山市境內著名的武夷山風景區，最早是武夷慧苑的一個名樅，另一説原產是在馬枕峯。
 
武夷山茶區，是一片兼有黃山怪石雲海之奇和桂林山水之秀的山水勝境。三十六峯，九曲溪水迂迴、環繞其間。山區平均海拔650米，有紅色砂岩風化的土壤，土質疏鬆，腐殖含量高，酸度適宜，雨量充沛，山間雲霧瀰漫，氣候温和，冬暖夏涼，巖泉終年滴流不絕。茶樹即生長在山凹巖壑間，由於霧大，日照短，漫射光多，茶樹葉質鮮嫩。

Oolong tea made with the method of making Wuyi rock tea ise a high-aroma variety of Wuyi rock tea. Cinnamon tea is produced in the famous Wuyi Mountain Scenic Area in Wuyishan City, Fujian Province. It was first named Cong in Wuyi Huiyuan, and another said it was originally produced in Mazhen Peak.
